These are perfect all year round. And in the summer you just want to crank down the heat so why use the oven? And they’re a treat that everyone just loves!
This recipe makes however many bars you want! Depends on size.
1 cup butter
1/2 cup brown sugar
1 teaspoon vanilla extract
3 cups quick oats
1 cup semi sweet chocolate chips
1/2 cup peanut butter
Grease a 9 by 9 pan
Melt butter in large saucepan in medium heat. Stir in the brown sugar and vanilla extract. Then mix in the oats. Cook in low heat until ingredients are well blended.
Once blended and cooked, put half in bottom of pan and reserve the other half for later.
Meanwhile, melt chocolate chips and peanut butter together in small saucepan over low heat. Stir until smoothe.
Pour the smoothened chocolate + peanut butter in the pan and spread evenly.
Set remaining oat mixture over chocolate and peanut butter. Cover and refrigerate until hard.
Cut into how ever big or small bars you want once in room temperature. Serve and enjoy! 😋

You can honestly eye ball this whole dish and everything will turn out fine.
Dump your favorite kind of chocolate chips (semi sweet, milk chocolate) in the bottom of a skillet. If you want to make sure it’s perfect, 1 1/2 cups to be exact. If you don’t have jumbo marshmellows, donut worry!! Mini ones or even regulars are just as delicious! Now place those raw marshmellows standing up on top of the chocolate chips. Take a little bit of butter (1/2 teaspoon) and spread it all over the marshmellows. After that, put them in the oven for about 5 minutes. Watch them carefully because this is the place you can mess up! Once they’re done cook’n it’s time to get out the graham crackers and start snack’n! Enjoy!!
